Citrus Avocado Salad with Orange Tahini Vinaigrette
At SORA HQ, we love our food. We also love a friendly recommendation. So, we thought it would be fun to share with you some recipes that we've we've tried, tested, and loved! To start off this series, here's a simple salad recipe that you can whip up when you're craving something fresh but with filling ingredients that will leave you feeling satisfied. We've taken a recipe from halfbakedharvest tweaked it a little according to our taste, which you are also welcome to do. Enjoy!
Ingredients:
Salad
- 1 cup raw walnuts
- 1 tablespoons honey
- flaky sea salt
- 3 cups mixed greens
- 1 orange, sliced
- 1 grapefruit, sliced
- 1 avocado, sliced
- shaved parmesan
Dressing
- 2 tbsp extra virgin olive oil
- 1/2 cup orange juice
- 1 tbsp tahini
- 1 tbsp apple cider vinegar
- 0.5 tsp honey
- salt and black pepper
Instructions:
1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Toss the walnuts and honey together on the baking sheet. Bake for 10-12 minutes, until the walnuts are toasted. Remove from the oven and spread the walnuts in one layer.
2. To make the vinaigrette, combine all ingredients in a glass jar and shake.
3. Add the greens to a large salad bowl and toss with about half of the vinaigrette. Add the orange slices, avocado, cheese, and toasted nuts. Gently toss. Enjoy!
